Šis vynas pagamintas pagal ypatingą metodą, vadinamą „Metodo Ripasso“. Monte Zovo interpretavo jį savaip. Jis yra geros struktūros, švelnus ir ilgai išliekančio, malonaus uogų ir razinų skonio. Jo alkoholio balansas užtikrina gerą geriamumą ir tai, kad jis tinka prie įvairaus maisto. Šis vynas puikiai tinka su Risotto, mėsos patiekalais, ypač kepsniais ir tradiciniais Veronos patiekalais, pagamintais virtos mėsos ir „peara“ pagrindu. Taip pat jis rekomenduojamas prie vidutinio kietumo sūrio.
